End of Summer Harvest

Last weekend we pulled great bounty from the gardens: all sorts of peppers, leeks, onions, carrots, beets, husk cherries, raspberries, various squash, kohlrabi, rutabega, beans and some resilient tomatoes that had not yet faded away. We also harvested herbs: chamomile, spilantes, horehound, sage, thyme, rosemary and lavender. Earlier, we'd benefited from a bounty of motherwort, nettles, violet, echinacea, marshmallow, calendula, rhodiola, milk thistle, lemon balm, bee balm, astragalus, elecampane and mullein...among so many others. Still in the mad rush to can the remaining tomatoes, we've made jar upon jar of salsa, sauce and roasted varieties. Now...to can, dry or root cellar the harvest. Goodbye summer .... hello fall and ... welcome to coming winter.
